I love cookbooks. I have many of them and am always looking for new good ones. I have some that are purely for looking at and reading through, because the recipes are far too extravagant to be practical for my life. I have some that are reference guides, full of basic information like how to make chicken stock and how long to bake a potato. Then there are those that I cook from each and every week. They are dog-eared, marked-up and worn. I love those cookbooks and feel like I have made a new friend when I find another to add to the collection. That is how I feel about the cookbook that I am giving away this week. I have blogged about it before, and am so excited to introduce someone else to this terrific book. I have only had the book a short time but have already made no less than 10 recipes from it and ALL of them have been good. Most of them have been outstanding.

The book is Don't Panic, Dinner's in the Freezer and it is not only full of good recipes, it teaches you how to make the most of your time, cooking in multiples and freezing for later. It has an exhaustive guide, explaining how best to freeze things to maximize your freezer space and their life in the freezer. It has been such a relief to have a small stockpile on hand for those days when the kids have driven me to exhaustion or I was longer at Target than I had planned and need to make dinner in a hurry. Even better, I was recently able to bless a woman at church who just had a baby by bringing her a meal of homemade soup and bread, but I didn't actually have to make any of it....it was already done and in my freezer! I don't know about you, but it's a lot easier to volunteer for things like meals on wheels when you don't have to figure out how on earth you're going to find the time to do it!

I tried doing the dream dinners thing where you do all your meal preparation at the store front and then freeze all the meals but their menus were a bit too highbrow for hubby's tastes. I love how you explain your addiction and how your cookbooks are like old friends. Well written.

Not Much More Than This

Here is one of our family's favorite recipes - definitely one to add to your recipe box

the worlds BEST banana cake with cream cheese frosting

TO DIE FOR! this is wake up in the middle of the night thinking
about it good...sneak a piece in the laundry room good...
hide the last piece from your very own children good!!!!!

i was a little doubtful about the 275 degree baking temperature,
but i cast my doubts aside and followed the recipe exactly
(almost unheard of for me-i'm a confirmed "recipe tweaker")
and it turned out wonderfully! the recipe calls for
putting the "just out of the oven, hot cake" into the freezer for a bit,
so you'll want to use a metal pan as opposed to a glass one.

ingredients:
3/4 cup butter
2 1/8 cups sugar
3 large eggs
2 teaspoons vanilla
3 cups flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1 1/2 cups buttermilk
2 teaspoons lemon juice
1 1/2 cups mashed ripe bananas

frosting
1/2 cup butter, softened
1 (8 ounce) package cream cheese, softened
3 1/2 cups confectioner's sugar
1 teaspoon vanilla
chopped walnuts

1. preheat oven to 275°.
2. grease and flour a 9 x 13 pan.
3. in a small bowl, mix mashed banana with the lemon juice; set aside.
4. in a medium bowl, mix flour, baking soda and salt; set aside.
5. in a large bowl, cream 3/4 cup butter and 2 1/8 cups sugar until light and fluffy.
6. beat in eggs, one at a time, then stir in 2 tsp vanilla.
7. beat in the flour mixture alternately with the buttermilk.
8. stir in banana mixture.
9. pour batter into prepared pan and bake in preheated oven for one hour or until toothpick inserted in centre comes out clean.
10. remove from oven and place directly into the freezer for 45 minutes.
11. this will make the cake very moist.
12. for the frosting, cream the butter and cream cheese until smooth.
13. Beat in 1 tsp vanilla.
14. add icing sugar and beat on low speed until combined, then on high speed until frosting is smooth.
15. spread on cooled cake.
16. sprinkle chopped walnuts over top of the frosting, if desired.
17. ready yourself for all the praises you're going to get!
